Does an SE1 address mean Southwark or Lambeth?
Either, and that is the trap. SE1 is shared: Borough, Bankside and Southwark itself sit on the Southwark side, while Waterloo and the South Bank are Lambeth. Only SE17 at Walworth and SE22 at East Dulwich are wholly this borough; SE5, SE15, SE16, SE21 and the rest each cross a line somewhere. None of it changes the price or the postage, because it is the drive that travels.

Your disk is never written to. Everything begins as a read-only image; the recovery then happens on that image, and the disk itself goes back exactly as it came. Booking is under a case number, not a company. Only the files the recovery calls for get opened. Any working copy left here is wiped thirty days after the drive reaches you, and the privacy policy spells that out.
The batch and allergen logs are gone. How urgent is this?
Treat it as urgent, and say so when you book it in. Traceability, batch and allergen records are things a food business is obliged to hold, so losing them is a compliance matter before it is a computer matter. Your drive is imaged first, before the day's other work, and a finishing date is set once the diagnosis will carry one. Weekday hours are 9am to 5:30pm.
How does a drive get from Southwark to you?
